Ingredients
  

Salad
  • 3 cups elbow macaroni uncooked
  • 1 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar optional
  • 1 cup red bell pepper diced
  • 1 cup celery finely chopped
  • 0.5 cup red onion finely diced
  • 0.25 cup sweet pickle relish
  • 2 tbsp fresh parsley chopped

Equipment

  • Large pot
  • Mixing bowls
  • Colander
  • Whisk

Method
 

  1. Cook macaroni in salted boiling water until al dente.
  2. Drain and rinse under cold water; drain thoroughly.
  3. Whisk mayonnaise, mustard, vinegar, sugar, salt and pepper.
  4. Stir in vegetables and relish.
  5. Fold in macaroni until evenly coated.
  6. Chill at least 1 hour before serving.

Notes

Best served chilled. Stir before serving and refresh with extra mayo if needed.
