Ingredients
  

  • 2 egg yolks pasteurized if preferred
  • 1 tbsp Dijon mustard
  • 2 garlic cloves minced
  • 2 anchovy fillets finely minced
  • 1 tbsp lemon juice fresh
  • 0.5 cup olive oil extra virgin
  • 0.5 cup Parmesan cheese finely grated
  • 0.25 tsp salt to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Whisk egg yolks and Dijon mustard until smooth.
  2. Add minced garlic and anchovies and whisk to combine.
  3. Slowly drizzle in olive oil while whisking to emulsify.
  4. Add lemon juice and Parmesan cheese, whisking until creamy.
  5. Season with salt and black pepper to taste.
