  • 1 egg yolk or mayonnaise
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 2 anchovy fillets finely chopped
  • 2 tbsp lemon juice fresh
  • 1 tsp Worcestershire sauce
  • 0.5 cup olive oil extra virgin
  • 0.5 cup Parmesan cheese freshly grated
  • 0.25 tsp salt to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Whisk egg yolk or mayonnaise, Dijon mustard, garlic, anchovies, lemon juice, and Worcestershire sauce until smooth.
  2. Slowly drizzle in olive oil while whisking constantly to emulsify.
  3. Stir in grated Parmesan cheese until fully combined.
  4. Season with salt and black pepper to taste.
  5. Chill for 30 minutes before serving for best flavor.
