Method
- Pat steak dry and season with salt, pepper, smoked paprika, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Sear steak pieces for 2–3 minutes per side until browned. Remove and set aside.
- Add butter to skillet and sauté onion until softened. Add garlic and cook until fragrant.
- Add tortellini and beef broth. Cover and simmer 5–7 minutes until tortellini is cooked.
- Pour in heavy cream and Parmesan cheese, stirring until sauce is smooth and thickened.
- Return steak to skillet and stir to combine. Add spinach and cherry tomatoes and cook until spinach wilts.
- Finish with lemon juice, adjust seasoning, and garnish with parsley before serving.
Notes
Use fresh tortellini for best texture. Add extra broth if sauce thickens too quickly.
