  • 1 lb beef steak cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 4 cloves garlic minced
  • 1 small onion finely chopped
  • 8 oz cheese tortellini fresh or frozen
  • 1 cup beef broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 2 cups baby spinach
  • 0.5 cup cherry tomatoes halved
  • 1 tbsp lemon juice
  • fresh parsley chopped, for garnish

Method
 

  1. Pat steak dry and season with salt, pepper, smoked paprika, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Sear steak pieces for 2–3 minutes per side until browned. Remove and set aside.
  3. Add butter to skillet and sauté onion until softened. Add garlic and cook until fragrant.
  4. Add tortellini and beef broth. Cover and simmer 5–7 minutes until tortellini is cooked.
  5. Pour in heavy cream and Parmesan cheese, stirring until sauce is smooth and thickened.
  6. Return steak to skillet and stir to combine. Add spinach and cherry tomatoes and cook until spinach wilts.
  7. Finish with lemon juice, adjust seasoning, and garnish with parsley before serving.

Notes

Use fresh tortellini for best texture. Add extra broth if sauce thickens too quickly.
