  • 1 lb beef steak (sirloin or ribeye) thinly sliced
  • 1 package cheese tortellini 9–12 oz
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 small onion diced
  • 1 cup heavy cream
  • 1 cup beef broth
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • salt and black pepper to taste
  • 2 cups fresh spinach optional
  • fresh parsley chopped for garnish

Method
 

  1. Pat steak dry and season with salt, pepper, and half the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak and cook 2–3 minutes per side until browned. Remove steak and set aside.
  3. Add butter to the same skillet. Sauté onion for 2 minutes, then add garlic and cook 1 minute until fragrant.
  4. Pour in beef broth and bring to a simmer. Add tortellini and cook according to package directions, stirring occasionally.
  5. Lower heat to medium-low. Add heavy cream and remaining Italian seasoning. Let sauce thicken for 2–3 minutes.
  6. Stir in Parmesan cheese until melted. Return steak to the skillet and combine.
  7. Add spinach and stir until wilted. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley.

Notes

For extra richness, add mozzarella or swap beef for chicken or sausage.
