Method
- Pat steak dry and season with salt, pepper, and half the Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add steak and cook 2–3 minutes per side until browned. Remove steak and set aside.
- Add butter to the same skillet. Sauté onion for 2 minutes, then add garlic and cook 1 minute until fragrant.
- Pour in beef broth and bring to a simmer. Add tortellini and cook according to package directions, stirring occasionally.
- Lower heat to medium-low. Add heavy cream and remaining Italian seasoning. Let sauce thicken for 2–3 minutes.
- Stir in Parmesan cheese until melted. Return steak to the skillet and combine.
- Add spinach and stir until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For extra richness, add mozzarella or swap beef for chicken or sausage.
