Ingredients
  

Potato Salad
  • 2 lbs baby Yukon Gold or red potatoes
  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp lemon juice fresh
  • 0.5 cup red onion finely chopped
  • 0.5 cup celery diced
  • 0.25 cup fresh dill finely chopped
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Place cut potatoes in salted cold water and bring to a boil.
  2. Simmer 10–15 minutes until fork-tender. Drain and cool slightly.
  3. Whisk mayonnaise, mustard, vinegar, lemon juice, salt, and pepper.
  4. Stir in onion, celery, and fresh dill.
  5. Fold potatoes gently into dressing until coated.
  6. Chill at least 1 hour before serving.

Notes

For extra creaminess, add 1–2 tablespoons sour cream. Best served chilled.
