Ingredients
  

Soup Base
  • 2 tbsp olive oil or butter
  • 1 onion diced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 400 g chicken breast or thighs diced
  • 3 potatoes peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 tsp dried thyme

Method
 

  1. Heat oil or butter in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened.
  3. Add garlic and cook briefly until fragrant.
  4. Stir in chicken and cook until lightly browned.
  5. Sprinkle flour over mixture and stir well.
  6. Gradually add chicken broth, stirring constantly.
  7. Add potatoes and seasonings, then simmer until tender.
  8. Stir in cream, adjust seasoning, and serve hot.

Notes

Do not boil after adding cream to maintain smooth texture.
