  • 2 boneless skinless chicken breasts sliced
  • 2 tsp Cajun seasoning
  • 8 oz penne or fettuccine pasta
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 small onion chopped
  • 1 red bell pepper sliced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 0.5 cup chicken broth
  • salt and black pepper to taste
  • fresh parsley for garnish

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Season sliced chicken with Cajun seasoning, salt, and pepper.
  3. Sear chicken in olive oil over medium-high heat until cooked through. Remove and set aside.
  4. Melt butter in the same skillet and sauté onion and bell pepper until softened.
  5. Add garlic and cook briefly until fragrant.
  6. Pour in chicken broth and heavy cream, stirring to combine.
  7. Simmer until slightly thickened, then stir in Parmesan cheese.
  8. Return chicken and pasta to skillet and toss to coat. Add reserved pasta water if needed.
  9. Garnish with parsley and serve hot.

Notes

Adjust Cajun seasoning to control spice level.
