Salad
  • 5 cups fresh broccoli florets chopped small
  • 0.5 cup cooked bacon crumbled
  • 0.75 cup shredded sharp cheddar cheese
  • 0.25 cup red onion finely diced
  • 0.33 cup sunflower seeds
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup plain Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Wash and dry broccoli thoroughly. Cut into small bite-sized florets.
  2. Combine broccoli, bacon, cheddar, red onion, and sunflower seeds in a large bowl.
  3. Whisk mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.
  4. Pour dressing over broccoli mixture and toss until evenly coated.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or refrigerate 30 minutes before serving.

Notes

For extra crunch, add sunflower seeds and bacon just before serving if making ahead.
