  • 1 ripe avocado
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 tbsp unsalted butter softened
  • 1 tsp lemon juice
  • salt to taste
  • black pepper to taste

Method
 

  1. Mash avocado with lemon juice, salt, and pepper.
  2. Butter one side of each bread slice.
  3. Layer cheese and avocado between bread slices.
