Creamy Avocado Grilled Cheese

Ingredients
  

Sandwich
  • 4 slices bread
  • 1 ripe avocado
  • 1.5 cups shredded cheese cheddar or mozzarella
  • 2 tbsp butter softened
  • 1 pinch salt
  • 1 pinch black pepper

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Mash avocado in a bowl and season lightly with salt and pepper.
  2. Butter one side of each bread slice.
  3. Spread avocado on unbuttered side of two slices and top with cheese.
  4. Close sandwiches with remaining bread slices, buttered side out.
  5. Cook in a skillet over medium-low heat until golden and cheese is melted.
  6. Slice and serve warm.

Notes

Use ripe avocado and low heat for best texture.
