Fat Bomb Base
  • 8 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 0.5 cup powdered sweetener erythritol or monk fruit
  • 0.5 cup fresh strawberries finely chopped
  • 0.25 cup almond flour
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Beat softened cream cheese and butter until smooth and fluffy.
  2. Add powdered sweetener, vanilla extract, and salt. Mix until fully combined.
  3. Fold in almond flour until mixture thickens slightly.
  4. Gently fold in chopped strawberries.
  5. Scoop mixture into small portions and roll into balls.
  6. Freeze for at least 30 minutes until firm.
  7. Store chilled or frozen until ready to serve.

Notes

Use finely chopped strawberries to avoid excess moisture.
