- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
- Trim chicken breasts and create a deep pocket by slicing horizontally through the thickest part without cutting all the way through.
- Season chicken inside and out with salt, pepper, garlic powder, onion powder, rosemary, and thyme.
- Stuff each chicken breast with brie, cranberry sauce, and nuts if using. Secure with toothpicks if needed.
- Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 2–3 minutes per side until golden brown.
- Transfer to the oven, add chicken broth or white wine to the baking dish, and bake for 20–25 minutes until internal temperature reaches 165°F (74°C).
- Rest chicken for 5 minutes, remove toothpicks, and serve with extra cranberry sauce and balsamic glaze if desired.
Notes
If you prefer a stronger cheese flavor, use more brie. For a sweeter cranberry flavor, add a tablespoon of maple syrup to the cranberry sauce.
