  • 4 boneless skinless chicken breasts
  • 4 oz brie cheese sliced or cubed
  • 0.5 cup cranberry sauce or fresh cranberries + honey
  • 0.25 cup walnuts or pecans optional
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and black pepper to taste
  • 0.5 cup chicken broth or white wine
  • 1 tbsp balsamic glaze optional

Method
 

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Trim chicken breasts and create a deep pocket by slicing horizontally through the thickest part without cutting all the way through.
  3. Season chicken inside and out with salt, pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Stuff each chicken breast with brie, cranberry sauce, and nuts if using. Secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 2–3 minutes per side until golden brown.
  6. Transfer to the oven, add chicken broth or white wine to the baking dish, and bake for 20–25 minutes until internal temperature reaches 165°F (74°C).
  7. Rest chicken for 5 minutes, remove toothpicks, and serve with extra cranberry sauce and balsamic glaze if desired.

Notes

If you prefer a stronger cheese flavor, use more brie. For a sweeter cranberry flavor, add a tablespoon of maple syrup to the cranberry sauce.
