Ingredients
  

Pastry Base
  • 2 sheets puff pastry thawed
  • 8 oz brie cheese cut into cubes
  • 1 cup whole berry cranberry sauce
  • fresh rosemary optional garnish

Equipment

  • Mixing bowls
  • Mini muffin tin
  • Baking sheet
  • Wire rack

Method
 

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. Cut puff pastry sheets into equal squares and press into muffin tin wells.
  3. Place one cube of brie in each pastry cup.
  4. Top brie with a spoonful of cranberry sauce.
  5. Bake 15–18 minutes until pastry is golden and cheese is melted.
  6. Cool slightly, garnish if desired, and serve warm.

Notes

Can be assembled ahead and baked just before serving.
