Ingredients
  

Roast Beef
  • 3 lb beef roast top round or sirloin tip
  • 2 cups fresh cranberries
  • 0.75 cup balsamic vinegar
  • 0.5 cup beef broth
  • 0.25 cup honey
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 325°F (165°C). Season beef with salt and pepper.
  2. Sear beef on all sides in hot oil until browned.
  3. Simmer cranberries, balsamic vinegar, honey, broth, and garlic until slightly thickened.
  4. Pour sauce over beef and roast until desired doneness.
  5. Rest beef, slice, and serve with extra sauce.

Notes

Allow roast to rest before slicing for best texture.
