Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth low sodium
  • 2 cups rotisserie chicken shredded
  • 2 cups egg noodles
  • 1 bay leaf
  • 1 tsp thyme

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add chicken broth, bay leaf, and thyme. Bring to a boil.
  5. Add egg noodles and cook until tender.
  6. Stir in shredded chicken and simmer until heated through.
  7. Season with salt and pepper, remove bay leaf, and serve.

Notes

Add lemon juice or fresh herbs for extra brightness.
