Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 12 oz Italian sausage sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cups white beans drained and rinsed
  • 4 cups chicken broth
  • 0.5 cup heavy cream

Equipment

Method
 

  1. Heat olive oil in a pot and brown sausage. Remove and set aside.
  2. Sauté onion, carrots, and celery until softened.
  3. Add garlic and cook until fragrant.
  4. Add beans, broth, and seasonings. Simmer.
  5. Return sausage and simmer until flavors meld.
  6. Blend part of the soup for creaminess.
  7. Stir in cream and adjust seasoning.

Blend only part of the soup to keep texture.
