Ingredients
  

Cowboy Caviar
  • 1 can black beans drained and rinsed
  • 1 can black-eyed peas drained and rinsed
  • 1 cup sweet corn
  • 2 roma tomatoes diced
  • 1 red bell pepper chopped
  • 0.5 red onion minced
  • 2 avocados diced
  • 0.25 cup fresh cilantro chopped
  • 0.25 cup olive oil
  • 3 tbsp lime juice fresh

Method
 

  1. Combine beans and corn in a large mixing bowl.
  2. Add tomatoes, bell pepper, onion, and cilantro.
  3. Whisk olive oil and lime juice together.
  4. Pour dressing over mixture and toss gently.
  5. Fold in avocado just before serving.

Notes

For best flavor, chill 20 minutes before serving and add avocado last.
