Ingredients
  

  • 1 cup long-grain white rice rinsed
  • 2 cups water or broth low sodium preferred
  • 1 tbsp neutral oil
  • 1 tsp salt or to taste
  • 1 lime juiced and zested
  • 0.25 cup fresh cilantro finely chopped

Method
 

  1. Rinse rice under cold water until water runs mostly clear.
  2. Combine rice, water, oil, and salt in a saucepan.
  3. Bring to a boil, then reduce heat to low, cover, and simmer until tender.
  4. Remove from heat and let rest covered for several minutes.
  5. Fluff rice with a fork.
  6. Fold in lime juice, zest, and cilantro gently.
  7. Adjust seasoning and serve warm.

Notes

Add lime and cilantro after cooking to preserve freshness.
