Ingredients
  

Steak Marinade
  • 1.5 lbs flank steak or skirt steak
  • 0.25 cup olive oil
  • 0.25 cup lime juice fresh
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper optional
  • 0.5 tsp black pepper
  • 1 tsp kosher salt
  • 2 tbsp fresh cilantro chopped
  • 0.5 tsp chipotle chili powder
  • 0.5 cup water to loosen marinade

Equipment

  • Mixing bowls
  • Grill or cast-iron skillet
  • Zip-top bag or shallow dish
  • Cutting board

Method
 

  1. Trim excess fat from steak and pat dry.
  2. Combine all marinade ingredients in a bowl and whisk well.
  3. Marinate steak in a zip-top bag or shallow dish for at least 2 hours, ideally overnight.
  4. Heat grill or cast iron skillet over high heat.
  5. Remove steak from marinade and sear 3–4 minutes per side for medium-rare.
  6. Let steak rest for 10 minutes before slicing against the grain.
  7. Serve in bowls, tacos, or over salad with your favorite toppings.

Notes

Marinating overnight delivers the best flavor. Slice against the grain for maximum tenderness.
