Copycat Chipotle Steak

Ingredients
  

Steak & Marinade
  • 1.5 pounds flank steak or skirt steak
  • 2 tbsp olive oil
  • 2 chipotle peppers in adobo from a can
  • 2 tbsp adobo sauce from the chipotle can
  • 1 tbsp lime juice fresh
  • 1 tbsp orange juice fresh or bottled
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 tsp brown sugar
  • 0.5 tsp salt or to taste
  • 0.5 tsp black pepper
  • 1 tbsp soy sauce optional
  • fresh cilantro for garnish
  • lime wedges for serving

Method
 

  1. Pat steak dry with paper towels.
  2. In a blender or food processor, blend chipotle peppers, adobo sauce, lime juice, orange juice, garlic, olive oil, cumin, oregano, smoked paprika, chili powder, brown sugar, salt, pepper, and soy sauce until smooth.
  3. Place steak in a zip-top bag or bowl and pour marinade over it. Seal or cover and refrigerate for at least 2 hours, preferably overnight.
  4. Remove steak from the fridge 30 minutes before cooking to bring it to room temperature.
  5. Heat grill or cast-iron skillet over high heat.
  6. Remove steak from marinade, shaking off excess, and cook 4–6 minutes per side for medium-rare.
  7. Transfer steak to a cutting board, cover with foil, and rest for 10 minutes.
  8. Slice steak thinly against the grain and garnish with cilantro. Serve with lime wedges.

Notes

Marinate overnight for best flavor. Slice thin against the grain for maximum tenderness. Great for burritos, bowls, tacos, and salads.
