- Preheat oven to 400°F (200°C). Pat cod fillets dry and season lightly with salt and pepper.
- In a large oven-safe skillet, heat oil over medium heat. Add onion and cook until soft, 4-5 mins.
- Add garlic and ginger; cook for 1 minute until fragrant. Stir in curry paste, turmeric, coriander, and pepper flakes; cook 1 more minute.
- Pour in coconut milk and add sliced bell pepper. Stir well, bring to a gentle simmer, then remove from heat. Season sauce with salt and pepper.
- Nestle the seasoned cod fillets into the sauce in the skillet.
- Transfer skillet to the preheated oven. Bake, uncovered, for 12-15 minutes, until cod flakes easily with a fork.
- Remove from oven and drizzle with fresh lime juice.
- Garnish with cilantro and green onion. Serve immediately with lime wedges and rice or bread.
Notes
Do not overcook the cod. Check at the 10-minute mark for thinner fillets. For a thicker sauce, remove cooked fish and simmer sauce on stovetop for 3-5 minutes. Halibut or haddock can be substituted for cod.
