Ingredients
  

Muffin Batter
  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 2 eggs large
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 0.5 cup vegetable oil
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini do not squeeze
  • 0.75 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. Whisk eggs and sugars together in a large bowl until smooth.
  3. Add oil, milk, and vanilla; mix well.
  4. Fold in dry ingredients until just combined.
  5. Stir in grated zucchini and chocolate chips.
  6. Divide batter into muffin cups.
  7. Bake 18–22 minutes until set.
  8. Cool before serving.

Notes

Do not squeeze zucchini for best moisture.
