Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Beat eggs and sugar until thick and pale.
- Fold in sifted dry ingredients gently.
- Spread batter evenly and bake 10–12 minutes.
- Roll cake in a cocoa-dusted towel while warm. Cool completely.
- Whip cream with sugar and vanilla. Spread on cake.
- Roll cake back up and prepare ganache.
- Pour ganache over cake and chill before serving.
Notes
Roll the cake while warm to prevent cracking.
