Ingredients
  

Chipotle Chicken
  • 1 lb chicken breasts boneless, skinless
  • 2 tbsp chipotle peppers in adobo chopped
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
Bowl Components
  • 2 cups cooked rice
  • 1 cup black beans rinsed and drained
  • 1 cup corn
Creamy Chipotle Sauce
  • 0.5 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp chipotle peppers in adobo

Method
 

  1. Blend chipotle peppers, olive oil, garlic, spices, and lime juice. Marinate chicken for at least 20 minutes.
  2. Cook chicken in a hot skillet or grill pan until fully cooked. Rest and slice.
  3. Warm black beans and corn; prepare rice if not already cooked.
  4. Blend sauce ingredients until smooth and creamy.
  5. Assemble bowls with rice, beans, corn, chicken, and sauce. Add toppings as desired.

Notes

Adjust chipotle quantity to control spice level.
