Chilled Cucumber Lemonade

An incredibly refreshing and healthy summer drink that combines cool cucumber with zesty lemon for the ultimate thirst-quencher.

Ingredients
  

Lemonade Base
  • 2 large English cucumbers peeled, seeded, and chopped
  • 1.5 cups fresh lemon juice about 8-10 lemons
  • 0.75 cup honey or granulated sugar adjust to taste
  • 6 cups cold water divided
  • 1 tsp vanilla extract optional
For Serving
  • Ice cubes
  • Cucumber wheels, lemon slices, mint for garnish

  • Fine-mesh strainer

Method
 

  1. In a blender, combine the chopped cucumbers and 2 cups of the cold water. Blend on high until completely smooth, about 60-90 seconds.
  2. Strain the blended cucumber mixture through a fine-mesh strainer into a large pitcher, pressing on the pulp with a spatula to extract all the liquid. Discard the pulp.
  3. To the pitcher with the cucumber juice, add the fresh lemon juice, honey (or sugar), remaining 4 cups of water, and vanilla extract (if using).
  4. Whisk vigorously until the sweetener is fully dissolved. Taste and adjust sweetness or tartness if needed.
  5. Cover the pitcher and refrigerate for at least 1-2 hours to allow the flavors to meld and the lemonade to chill thoroughly.
  6. To serve, fill glasses with ice. Pour the chilled lemonade over the ice and garnish with a cucumber wheel, a lemon slice, and a sprig of fresh mint.

Notes

For a less sweet version, start with 1/2 cup of sweetener and add more to taste. To prevent dilution, freeze some of the lemonade into ice cubes.
