- Wash and chop fresh spinach. Shred cheeses.
- Melt butter in a medium saucepan over medium heat. Add garlic and sauté 1 minute.
- Add diced green chilies and cook 1 more minute.
- Sprinkle in flour and whisk 1–2 minutes to make a roux.
- Gradually pour in milk, whisking constantly until mixture thickens.
- Stir in softened cream cheese until smooth.
- Add Monterey Jack and white cheddar, stirring until melted and creamy.
- Season with salt, pepper, and smoked paprika.
- Stir in chopped spinach until wilted.
- Serve warm, garnished with extra spinach and tortilla chips.
Notes
For extra creaminess, add a splash of heavy cream or sour cream.
