Ingredients
  

Main Ingredients
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 0.25 cup green chilies diced
  • 0.25 cup all-purpose flour
  • 2 cups milk whole milk preferred
  • 4 oz cream cheese softened
  • 1 cup Monterey Jack cheese shredded
  • 1 cup white cheddar cheese shredded
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp smoked paprika
  • 2 cups fresh spinach chopped

Method
 

  1. Wash and chop fresh spinach. Shred cheeses.
  2. Melt butter in a medium saucepan over medium heat. Add garlic and sauté 1 minute.
  3. Add diced green chilies and cook 1 more minute.
  4. Sprinkle in flour and whisk 1–2 minutes to make a roux.
  5. Gradually pour in milk, whisking constantly until mixture thickens.
  6. Stir in softened cream cheese until smooth.
  7. Add Monterey Jack and white cheddar, stirring until melted and creamy.
  8. Season with salt, pepper, and smoked paprika.
  9. Stir in chopped spinach until wilted.
  10. Serve warm, garnished with extra spinach and tortilla chips.

Notes

For extra creaminess, add a splash of heavy cream or sour cream.
