Ingredients
  

Chicken Shawarma Marinade
  • 2 lbs boneless chicken thighs
  • 0.5 cup plain yogurt
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 4 cloves garlic minced
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 0.5 tsp cinnamon
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Mixing bowls
  • Skillet or Grill Pan
  • Knife
  • Cutting board

Method
 

  1. Whisk together yogurt, olive oil, lemon juice, garlic, and spices in a bowl.
  2. Add chicken and coat thoroughly. Marinate at least 1 hour or overnight.
  3. Heat skillet over medium-high heat with a little oil.
  4. Cook chicken 5–6 minutes per side until golden and cooked through.
  5. Rest chicken 5 minutes, then slice thinly.
  6. Serve in pita or bowls with desired toppings and sauce.

Notes

Marinating overnight gives the best flavor. Serve with garlic sauce or yogurt sauce.
