Zucchini Boats
  • 4 zucchini halved lengthwise
  • 2 cups cooked chicken shredded
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Slice zucchini lengthwise and scoop out centers to form boats.
  3. Mix cooked chicken, marinara sauce, garlic, and seasoning in a bowl.
  4. Fill zucchini boats with chicken mixture.
  5. Top with mozzarella and parmesan cheese.
  6. Bake 25–30 minutes until tender and bubbly.
  7. Broil briefly for golden top if desired.
