Ingredients
  

Casserole
  • 2 lbs boneless skinless chicken breasts cut into pieces
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 cup yellow onion chopped
  • 3 cloves garlic minced
  • 12 oz mushrooms sliced
  • 2 tbsp all-purpose flour
  • 0.75 cup Marsala wine
  • 1 cup chicken broth
  • 0.75 cup heavy cream

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. Season chicken with salt and pepper.
  3. Sear chicken briefly in olive oil and butter, then transfer to casserole dish.
  4. Sauté onion, garlic, and mushrooms in the same skillet.
  5. Stir in flour, then add Marsala wine and chicken broth.
  6. Add cream, simmer until slightly thickened, then pour over chicken.
  7. Bake covered for 25 minutes, then uncovered for 15 minutes.

Notes

Serve with pasta, rice, or mashed potatoes.
