- Preheat oven to 375°F (190°C) and grease a baking dish.
- Combine sliced chicken, olive oil, fajita seasoning, garlic powder, smoked paprika, salt, and pepper in a bowl.
- Add bell peppers and onions and toss until coated.
- Layer cooked rice in the baking dish if using.
- Spread the chicken and vegetable mixture evenly in the dish.
- Spoon salsa over the top and cover with foil.
- Bake for 25 minutes, then remove foil and stir gently.
- Spread sour cream and sprinkle cheese over the casserole.
- Bake uncovered another 10–15 minutes until cheese is melted.
- Rest for 5 minutes, garnish with cilantro, and serve.
Notes
Adjust spice level by choosing mild or hot salsa.
