Chicken Fajita Casserole

A bold, cheesy Tex-Mex inspired one-pan casserole with seasoned chicken, peppers, onions, and salsa baked to perfection.

Ingredients
  

Casserole
  • 2 large boneless skinless chicken breasts sliced into strips
  • 3 bell peppers mixed colors, sliced
  • 1 medium onion sliced
  • 1 cup cooked rice optional
  • 1 cup shredded cheddar or Mexican blend cheese
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 2 tbsp olive oil
  • 1 packet fajita seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • fresh cilantro optional garnish

Equipment

  • Large mixing bowl
  • Baking dish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Combine sliced chicken, olive oil, fajita seasoning, garlic powder, smoked paprika, salt, and pepper in a bowl.
  3. Add bell peppers and onions and toss until coated.
  4. Layer cooked rice in the baking dish if using.
  5. Spread the chicken and vegetable mixture evenly in the dish.
  6. Spoon salsa over the top and cover with foil.
  7. Bake for 25 minutes, then remove foil and stir gently.
  8. Spread sour cream and sprinkle cheese over the casserole.
  9. Bake uncovered another 10–15 minutes until cheese is melted.
  10. Rest for 5 minutes, garnish with cilantro, and serve.

Notes

Adjust spice level by choosing mild or hot salsa.
