Ingredients
  

Casserole Base
  • 2 cups cooked chicken diced or shredded
  • 2 cups cooked white rice
  • 2 cups broccoli florets fresh or lightly steamed
  • 1 can cream of chicken soup 10.5 oz
  • 0.5 cup sour cream
  • 0.5 cup milk
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, whisk soup, sour cream, milk, and seasonings until smooth.
  3. Stir in cooked rice and chicken until evenly coated.
  4. Fold in broccoli and half of the cheese.
  5. Transfer mixture to baking dish and top with remaining cheese.
  6. Bake uncovered for 30–35 minutes until bubbly and golden.
  7. Rest 5–10 minutes before serving.

Notes

Add a splash of milk when reheating to maintain creaminess.
