Chicken and Broccoli Stir Fry (Chinese Takeout Style)

Ingredients
  

Chicken
  • 1 lb boneless skinless chicken breast thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 0.25 tsp black pepper
Stir Fry & Sauce
  • 3 cups broccoli florets
  • 2 tbsp vegetable oil divided
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • 0.33 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 0.5 cup chicken broth
  • 1 tbsp cornstarch mixed with 2 tbsp water

Equipment

  • Wok or Large Skillet
  • Mixing bowls

Method
 

  1. Marinate sliced chicken with soy sauce, cornstarch, sesame oil, and pepper for 10–15 minutes.
  2. Whisk together soy sauce, oyster sauce, sugar, and chicken broth.
  3. Stir fry broccoli in oil for 2–3 minutes and remove.
  4. Cook chicken until nearly done.
  5. Add garlic and ginger, cook briefly.
  6. Return broccoli and pour in sauce.
  7. Add cornstarch slurry and simmer until thickened.
  8. Serve hot with rice or noodles.

Notes

Slice chicken thinly and cook over high heat for best results.
