- Cook cherries with sugar and lemon juice until softened. Cool completely.
- Whisk egg yolks and sugar over gentle heat until pale. Cool.
- Fold mascarpone into egg mixture until smooth.
- Whip cream to soft peaks and fold into mascarpone mixture.
- Stir in vanilla and amaretto.
- Mix espresso with amaretto. Quickly dip ladyfingers.
- Layer ladyfingers, mascarpone cream, and cherries. Repeat.
- Chill at least 6 hours. Dust with cocoa before serving.
