Cheesy Vegetable Casserole

Ingredients
  

Vegetables
  • 2 cups broccoli florets chopped
  • 1 cup cauliflower florets chopped
  • 1 cup carrots thinly sliced
  • 1 cup zucchini diced
  • 1 cup mushrooms sliced
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.5 tsp dried thyme
Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated
Topping
  • 0.5 cup breadcrumbs
  • 2 tbsp butter melted

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Combine vegetables, olive oil, and seasonings in a bowl.
  3. Sauté vegetables in a skillet for 5–7 minutes until slightly tender.
  4. Make cheese sauce by melting butter, whisking in flour, then adding milk and cheddar.
  5. Spread vegetables in baking dish and pour cheese sauce over them.
  6. Mix breadcrumbs with melted butter and sprinkle on top.
  7. Bake uncovered for 25–30 minutes until golden and bubbly.
  8. Garnish with parsley and serve.

Notes

Use seasonal vegetables for best flavor. Can be prepared a day ahead.
