Ingredients
  

Potato Filling
  • 4 russet potatoes peeled and diced
  • 2 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
Assembly
  • 4 flour tortillas large

Method
 

  1. Boil diced potatoes in salted water until fork-tender. Drain well.
  2. Heat oil or butter in a skillet. Add potatoes and gently mash.
  3. Season with garlic powder, onion powder, paprika, salt, and pepper.
  4. Remove from heat and stir in shredded cheeses until melted.
  5. Warm tortillas and fill with cheesy potato mixture.
  6. Roll into burritos and toast if desired.
  7. Serve hot with optional toppings.
