Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1 cup sharp cheddar cheese finely grated
  • 2 jalapeños seeded and minced
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Cream butter until smooth. Mix in cheese, jalapeños, salt, and pepper.
  3. Gradually add flour until a soft dough forms.
  4. Chill dough for 30–40 minutes, then roll and cut.
  5. Bake 18–22 minutes until lightly golden. Cool on wire rack.
