Potatoes
  • 8 Yukon Gold potatoes medium
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 cup Gruyère cheese shredded
  • 1 cup cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C) and butter a baking dish.
  2. Slice potatoes thinly hasselback-style, keeping the base intact.
  3. Arrange potatoes upright in the baking dish.
  4. Warm cream, milk, butter, garlic, salt, and pepper in a saucepan.
  5. Pour cream mixture over potatoes and cover with foil.
  6. Bake 45 minutes, then add cheese and bake uncovered 40 minutes.
  7. Rest 10 minutes before serving.
