Ingredients
  

Casserole Base
  • 2 cups whole kernel corn drained
  • 1 cup creamed corn
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 0.5 cup sour cream
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 0.5 cup milk
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix whole corn and creamed corn.
  3. Add butter, sour cream, milk, and eggs. Whisk until smooth.
  4. Stir in cheeses, reserving some for topping.
  5. Season and gently mix in flour until combined.
  6. Pour into baking dish and top with remaining cheese.
  7. Bake 40–45 minutes until golden and set.
  8. Rest 10 minutes before serving.
