Ingredients
  

Pasta & Chicken
  • 400 g pasta penne or rotini
  • 2 chicken breasts boneless, skinless
  • 2 tbsp olive oil
Cheese Sauce
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 2 cups milk or cream
  • 1 cup mozzarella cheese shredded
  • 1 cup cheddar cheese shredded
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Whisk

Method
 

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken and cook in olive oil until golden and cooked through. Remove and set aside.
  3. Melt butter in the same skillet and sauté garlic briefly.
  4. Whisk in flour and cook for 1 minute.
  5. Slowly add milk, whisking until thickened.
  6. Stir in cheeses until smooth.
  7. Return chicken and pasta to the skillet and toss to coat.
