- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook tortellini in salted boiling water until al dente. Drain.
- Sauté onion and garlic in olive oil until fragrant.
- Add ground beef and cook until browned.
- Stir in marinara sauce and tomato paste; simmer 10 minutes.
- Combine tortellini with ricotta and half the meat sauce.
- Layer tortellini, sauce, and cheeses in baking dish.
- Bake covered 20 minutes, then uncover and bake 15 minutes until bubbly.
