Casserole
  • 20 oz cheese tortellini
  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 3 cups marinara sauce
  • 2 tbsp tomato paste
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook tortellini in salted boiling water until al dente. Drain.
  3. Sauté onion and garlic in olive oil until fragrant.
  4. Add ground beef and cook until browned.
  5. Stir in marinara sauce and tomato paste; simmer 10 minutes.
  6. Combine tortellini with ricotta and half the meat sauce.
  7. Layer tortellini, sauce, and cheeses in baking dish.
  8. Bake covered 20 minutes, then uncover and bake 15 minutes until bubbly.
