Ingredients
  

  • 1 lb ground beef
  • 1.5 lb baby potatoes halved
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1.5 cups milk
  • 0.5 cup heavy cream
  • 2 cups cheddar cheese shredded

Method
 

  1. Brown ground beef in a large pot and drain excess fat.
  2. Melt butter in the same pot and sauté onion until soft. Add garlic.
  3. Stir in flour and cook briefly to form a roux.
  4. Slowly whisk in broth and bring to a simmer.
  5. Add baby potatoes and cook until tender.
  6. Reduce heat and stir in milk, cream, beef, and cheese.
  7. Season to taste and serve hot.

Notes

For best texture, shred cheese fresh and avoid boiling after adding dairy.
