Ingredients
  

Chai Base
  • 2 cups full-fat coconut milk
  • 1 cup water
  • 2 black tea bags
  • 1 cinnamon stick
  • 4 cardamom pods lightly crushed
  • 3 whole cloves
  • 1 slice fresh ginger
  • 2 tbsp maple syrup or honey adjust to taste
  • 0.5 tsp vanilla extract optional
  • 1 pinch ground cinnamon or nutmeg for garnish

Method
 

  1. Simmer water with cinnamon, cardamom, cloves, and ginger for 5 minutes.
  2. Add tea bags and steep gently for 2 minutes.
  3. Pour in coconut milk and heat without boiling.
  4. Strain spices and tea.
  5. Sweeten with maple syrup or honey and add vanilla if desired.
  6. Whisk lightly for froth and serve warm with garnish.

Notes

Adjust spices and sweetness to taste. Use rooibos for caffeine-free version.
