Ingredients
  

Tart Base
  • 1 sheet puff pastry thawed
  • 3 yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tbsp balsamic vinegar
  • 4 oz goat cheese softened
  • 1 tbsp fresh thyme
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Cook onions in olive oil and butter over medium heat until softened.
  3. Reduce heat and caramelize onions for 25–35 minutes until golden.
  4. Stir in balsamic vinegar and cool slightly.
  5. Roll and cut puff pastry into desired shapes.
  6. Spread goat cheese inside scored borders.
  7. Top with caramelized onions and thyme.
  8. Brush edges with egg wash and bake 18–22 minutes until golden.

Notes

For extra richness, drizzle with balsamic glaze before serving.
