Ingredients
  

Main Ingredients
  • 1.5 lb chicken thighs or breasts cut into pieces
  • 1.5 cups long-grain white rice
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 1 cup bell peppers diced
  • 3 cloves garlic minced
  • 2 tbsp Cajun seasoning
  • 3 cups chicken broth

Method
 

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet and brown chicken. Remove and set aside.
  3. Sauté onion and bell peppers until soft. Add garlic.
  4. Stir in rice and toast briefly.
  5. Add broth and return chicken to the pan.
  6. Cover and simmer until rice is tender and chicken cooked through.

Notes

Adjust Cajun seasoning to control heat level.
