Ingredients
  

Gratin Base
  • 1 large butternut squash peeled and thinly sliced
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 2 cloves garlic minced
  • 1 cup Gruyère cheese grated
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg
  • 1 tsp thyme fresh or dried

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C) and butter a baking dish.
  2. Peel and thinly slice the butternut squash.
  3. In a saucepan, melt butter and sauté onion and garlic until soft.
  4. Add cream, milk, salt, pepper, nutmeg, and thyme. Heat gently.
  5. Layer squash slices in the baking dish, spooning cream sauce and cheese between layers.
  6. Cover with foil and bake for 35 minutes.
  7. Remove foil and bake another 25 minutes until golden and tender.
  8. Rest for 10 minutes before serving.

Notes

Let the gratin rest before serving for cleaner slices and richer flavor.
