- Cook pasta until al dente, drain and set aside.
- Melt butter in saucepan, whisk in flour and cook briefly.
- Slowly add milk and cream, whisking until thickened.
- Stir in cheeses until smooth.

Use leftover smoked brisket for best flavor.
