Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 0.5 cup sour cream
  • 1 tsp vanilla extract
Blueberry Topping
  • 2 cups blueberries fresh or frozen
  • 0.25 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Equipment

Method
 

  1. Preheat oven to 325°F (165°C) and prepare springform pan.
  2. Mix crust ingredients, press into pan, and bake 10 minutes.
  3. Cook blueberry topping until thickened and set aside.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs, sour cream, and vanilla, mixing gently.
  6. Pour filling over crust and top with blueberries.
  7. Add crumble topping evenly.
  8. Bake 55–65 minutes, cool gradually, then chill before serving.

Notes

Cheesecake tastes best chilled overnight for clean slices.
