Ingredients

Beef and Broccoli
  • 1 lb flank steak or sirloin thinly sliced against the grain
  • 4 cups broccoli florets
  • 2 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tsp ginger minced
  • 0.25 tsp red pepper flakes optional
Sauce
  • 1/3 cup soy sauce low sodium preferred
  • 1/4 cup beef or chicken broth
  • 2 tbsp oyster sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil

Equipment

  • Mixing bowls
  • Wok or Large Skillet
  • Cutting board
  • Chef’s knife

Method

  1. In a small bowl, whisk together soy sauce, broth, oyster sauce, brown sugar, cornstarch, and sesame oil. Set aside.
  2. Bring a pot of water to a boil and cook broccoli for 1–2 minutes until bright green and slightly tender. Transfer to ice water. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef and sear until browned, about 2–3 minutes per side. Remove beef and set aside.
  4. In the same pan, add garlic, ginger, and red pepper flakes. Sauté for 30 seconds until fragrant.
  5. Return beef to pan with broccoli. Pour in sauce and stir constantly for 2–3 minutes until sauce thickens.
  6. Transfer to serving dish, garnish with sesame seeds and green onions, and serve immediately.

Notes

Best served immediately with steamed rice or noodles. Adjust soy sauce to taste.
