Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened.
- Stir in garlic and cook briefly.
- Add chicken, water or stock, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 45–60 minutes.
- Remove chicken, shred meat, discard bones.
- Return chicken to pot, adjust seasoning, and serve.
Notes
Add noodles or rice for a heartier soup.
