Ingredients
  

Soup Base
  • 1 whole chicken
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 carrots sliced
  • 3 stalks celery sliced
  • 3 cloves garlic minced
  • 2 bay leaves
  • 1 tsp thyme
  • 8 cups water or chicken stock

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened.
  3. Stir in garlic and cook briefly.
  4. Add chicken, water or stock, bay leaves, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer 45–60 minutes.
  6. Remove chicken, shred meat, discard bones.
  7. Return chicken to pot, adjust seasoning, and serve.

Notes

Add noodles or rice for a heartier soup.
